Marrow recipe...


a nice hearty dish for the autumn - good for using up marrows from the allotment!



 

Ingredients

3oz vegan margarine
1 clove garlic
1 large onion
1 medium marrow
1 tin chopped tomatoes
Pinch of chili powder

2oz breadcrumbs
2tbsps olive oil

Method

1. Preheat oven to 400F, 200C, gas 6
2. Lightly grease a gratin dish.
3. Chop onion and garlic and saute in a frying pan
4. Chop marrow into chunks. Stir into the frying pan with tomatoes and chili powder
5. Cover and cook for 10mins or so until tender
6. Spoon mixture into gratin dish
7. Fry the breadcrumbs in olive oil until crisp.
8. Sprinkle over the top of the gratin dish and place in oven for 10mins or so until top is brown and crispy
9. Serve - eat and enjoy!
